I've been looking for Huitlacoche for a year or so, determined to find it and eventually give it a try...

So I found some at my local bodega... a single can with a bit of rust around the rim, but this didn't deter me...
Ahh yes, infected corn...
Look at the size of those swollen kernels! (yay macro setting on my camera)...
This stuff tastes surprisingly good... It has onions, corn meal, green peppers, salt and water in it... tastes a bit like salty, slightly fermented hominy...
I've been fascinated by this stuff for a while, and only after searching for some background for this post, I found the following similar link:

Jesus. I guess it's no worse than black pudding but still, i'm not so sure i'd enjoy eating a can of disease.

i put it atop a vegan enchilada. it was actually really good... so good, i managed to eat it all before snapping a photo...
